Owned and managed by Tom and Pat Redmond, the farm picked up a gold medal for their Angus fillet and two bronze medals – one for sirloin and one for ribeye – on a platform where the world’s finest steaks are put to the test. This is the third year Redmond Farm have entered and won medals in the competition, and the first time they have picked up a gold medal.
“The WSC is the ultimate competition for steak producers and suppliers to showcase their product quality and breed credentials on an international stage, while also testing themselves against competitors from around the world. We are absolutely delighted to receive a gold this year. It puts a small Wexford beef producer on an international stage with some of the biggest hitters in the world and we are already getting lots of visitors to the Rowan and the Ivy Bar asking about the best fillet steak in the world!” said Manager of the Ashdown Park Hotel, Paul Finegan. “Our new refurbished Rowan Restaurant is showcasing the award-winning steaks, which are also available in the Ivy at the Ashdown Park Hotel and BBG at the Amber Springs Hotel.”
The award-winning steaks from Redmond Farm were carefully chosen by Executive Chef from The Amber Springs, William Millar and aged in the Ashdown Park Hotel’s dry aging salt chamber under the care of Head Chef, Andrew O’Gorman.
